I used to trash it all and permanently delete it. I had an epiphany one night and realized I had tossed away a GREAT piece of dialogue. I do the same thing. I just let things flow (stream of consciousness) and when I'm finished I just check to see what I have. It’s easier and much more natural for me to just write and edit later. I'm more of a free flow kinda girl. I keep everything I write, even if it's garbage. I actually have a "garbage" folder on my desktop. Bad stuff goes in and from time I go through it. The fact that you and I both initially write with pen and pad proved to me that mind mapping wouldn't really be my cup of tea either.
