THE PIE

For our first pie, Kristin chose Maple Orange Walnut Pie from A Year of Pies by Ashley English. And she couldn’t have made a better choice. First of all, I love anything orange flavored… I just find it to be comforting. Especially in the cooler weather.

So, I did have a few issues with the ingredients:

  • The Hubs doesn’t eat nuts, so I eliminated the walnuts in the recipe and used them as a garnish instead.
  • I couldn’t find orange extract anywhere, so in my last grocery store option, I did a google search and found out that I’d have to use vodka and wait two weeks to make my own. Ummmm, no. So I used orange juice instead. I just halved the amount called for and hoped for the best.
  • I used a pre-made crust. OK. Here’s the deal. I was feeling lazy and unsure of my skill set. Next time, a homemade crust will be made.

THE COFFEE

I wanted a coffee that wouldn’t compete with the flavor of the pie, so I opted for Gevalia Colombian Coffee. It’s a nice smooth coffee that pairs well with dessert.

THE CHAT

I would be remiss if I didn’t mention the Martin Luther King, Jr. Holiday. My sister’s pastor said it best when he quoted Colossians 3:11, which says:

Here there is no Gentile or Jew, circumcised or uncircumcised, barbarian, Scythian, slave or free, but Christ is all, and is in all.

If you love Christ and follow Him, your love for Him should extend to all people regardless of race or ethnicity. Respect and love one another.

ABOUT COFFEE AND PIE

Coffee and Pie Chat was born of my desire for pie. I follow Kristin on Instagram, where she posts pictures of the most delicious looking pies. So I contacted her and asked if she’d be interested in baking and posting seasonal pies with me and sharing them on our blogs. She was game and took over from there. I’m not a baker at all, but Kristin is gifted. So this is a learning for me and a teaching for her.
