If I thought last week’s challenge to find something yellow was next to impossible, I cannot begin to explain how hard finding something orange was… Seriously, where is all of the orange stuff? Actually, there are a few people who’re missing her ~ her family, myself and the many bloggers who’ve complained about the lack of coverage that Jahessey’s receiving. But you wouldn’t know that if you were simply relying on the media to provide information. Meatless Monday: Crockpot 4 Bean Chili with Rice
Soooo, the family survived the first round of Meatless Monday! I’m so incredibly proud of them. I fully expected a lot of grumbling and sneaking of meat but the kids were all over that Spinach, Tomato and Cheese Tortellini (click here for the recipe). In the interest full disclosure, the hubs was out of town, so it was pretty easy to get the kids on board.
