Veggie Lasagna {Meatless Monday}
It’s been a long time since I’ve posted about Meatless Monday, I guess because we’ve mostly been eating soups on those days but last night was totally different. I made a Veggie Lasagna that was to die for… OK, truth, the girls and I loved it, the guys not so much. So while it may not be a total guy pleaser, I think it’s well worth trying. Has this week flown by or what? I’m trying to remember what I could have done to make it go by so quickly but, yeah, I got nothing. Maybe it’s just that I’m getting older and time flies… I’m finally starting to branch out and get a little more creative with my self portraits. It’s nice to do more than take pictures of my face. Things Happened While I Was Disconnected
So much has happened in the last week and a half that I’ve been disconnected. Â Most of it’s been good, some of it’s been bad and the rest has been seriously? I’ve lived in the Back Mountain for 13 years now and in that time I’ve started taking the beauty of this place for granted.  This is a small community where everyone pretty much knows everyone and small town values are still upheld.
