I want to pause before we begin to honor our blogging friend, Iris at Iris’s Original Ramblings. Our friendship began through Bettye’s invitation to join “Where Bloggers Live.” What started as simple interactions – sharing blog prompts and leaving comments – blossomed into something more. Our email exchanges soon became deeper, filled with anecdotes about our families, personal health updates, and the casual life discussions that friends share. Friends are not always the people we see every day, they’re the people we share our lives with, and I’m thankful Iris chose to share hers with me and the women in our group. You will be deeply missed, Iris.

I also want to take this opportunity to say “Goodbye” to my blogging friend, Leslie who used to blog at Once Upon a Time and Happily Ever After. After dealing with a series of tech issues, Leslie has decided to end her blog. I’m sad to see Leslie go, as she and I have been blogging buddies since forever. In fact, it has been so long that I genuinely cannot remember when or where we first met. I believe Leslie is going to remain on Instagram, so you can find her there. She’s incredibly stylish, so I highly recommend following her account: @onceuponatimehappilyeverafter.

True story: When The Hubs and I first got married, I could not cook. In my defense, I didn’t have to cook. My daughter was an infant and not eating solid food and I was perfectly content eating Popeye’s two-piece spicy chicken with red beans and rice and a biscuit. Skip ahead about a year and I decided that my first real meal was going to be a Thanksgiving dinner. Yes. Really. I’m nothing, if not ambitious. And confident.

I made all of the traditional foods: turkey, corn, mashed potatoes and gravy, cranberries, rolls, and baked macaroni and cheese. That’s where I messed up. The baked macaroni and cheese. When you see Black folks say not everyone can make baked macaroni and cheese, believe them. Making baking macaroni and cheese requires a special skill that I did not have. And still do not have.

I can, however, make a delicious cornbread stuffing. My family loves my stuffing. In fact, my kids call me every year for the ingredients when they can’t make it home. I make my cornbread stuffing like traditional stuffing, except I add in a roughly chopped boiled egg and chopped chicken gizzards that have been boiled in salt, pepper, onion powder, and garlic powder. It makes the house smell so good. And, y’all, it’s so delicious. The kids and I eat on it for days because, as with all Thanksgiving meals, everything tastes better the next day {or two days later}.
